Ingredients
°1 pound of ground beef
°1 package of taco seasoning mix
°1 can of light enchilada sauce
°1 box of fried beans
°1 can of filtered corn
°8 flour tortillas, cutting in half
°2 c. cheese taco mix
°1 small green pepper can
°Green onions for garnish
Preparation
Preheat oven 350 degrees
In a large skillet, cook ground beef over medium-high heat until browned all over.
Add taco seasoning to the meat, stir and sauté for another 2-3 minutes.
Stir in the corn, enchilada sauce, beans, and cayenne pepper until well combined. Leave it to simmer for 5 minutes.
Place a layer of 4 flour tortillas, cut in half, in the bottom of a well-greased 9″ x 13″ baking dish.
Cover the tortilla with half of the meat mixture, then half of the grated cheese.
Add another layer of the remaining tortillas, and cover with the second half of the remaining meat and cheese mixture on top. Bake for 20 minutes.
Garnish with freshly chopped green onions for garnish, if desired.
