Ingredients
3-pound beef chuck roast
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon smoked paprika (optional)
4 whole garlic cloves
1 red onion, sliced
1 cup Italian dressing
1 cup beer (your choice)
2 bay leaves
Hawaiian slider buns
Colby jack cheese slices
Preparation
Place the beef chuck roast into a 6-quart or larger slow cooker.
Sprinkle the roast with salt, pepper, and smoked paprika.
Place the garlic cloves on top of the roast and add the sliced red onion.
Pour the Italian dressing and beer over the roast, then place the bay leaves on top.
Cover the slow cooker and set it to cook on high for 6 hours or on low for 8 to 10 hours. Do not open the lid during the cooking time.
After cooking, remove and discard the bay leaves.
Shred the meat using two forks, smash the garlic with the back of a fork, and stir into the shredded meat. Discard any excess fat and drain off the grease.
Lay out the bottoms of the Hawaiian slider buns on a tray. Top with the shredded meat and add a slice of Colby jack cheese on each.
Place under the broiler in the oven just until the cheese is melted.
Cover with the tops of the Hawaiian buns.
