Lazy Girl Pecan Pie Bars

Ingredients:

For the Crust:

  • 1 ½ cups all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, softened

For the Filling:

  • 1 cup light corn syrup
  • 1 cup packed brown sugar
  • ¼ cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped pecans

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Make the Crust:
    • In a medium bowl, mix together the flour and sugar.
    • Cut in the softened butter until the mixture resembles coarse crumbs.
    • Press the mixture evenly into the bottom of the prepared baking pan.
  3. Bake the Crust: Bake for about 10 minutes, or until lightly golden.
  4. Prepare the Filling:
    • In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth.
    • Stir in the chopped pecans.
  5. Assemble the Bars:
    • Pour the pecan filling over the partially baked crust.
    • Spread it out evenly with a spatula.
  6. Bake: Bake for 30-35 minutes, or until the filling is set and the top is golden brown. A toothpick inserted into the center should come out with only a few moist crumbs.
  7. Cool and Cut:
    • Allow the bars to cool completely in the pan on a wire rack.
    • Once cooled, lift them out using the parchment paper (if used) and cut into squares.
