Ingredients:
For the Crust:
- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ½ cup unsalted butter, softened
For the Filling:
- 1 cup light corn syrup
- 1 cup packed brown sugar
- ¼ cup unsalted butter, melted
- 3 large eggs
- 1 teaspoon vanilla extract
- 2 cups chopped pecans
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
- Make the Crust:
- In a medium bowl, mix together the flour and sugar.
- Cut in the softened butter until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking pan.
- Bake the Crust: Bake for about 10 minutes, or until lightly golden.
- Prepare the Filling:
- In a large bowl, whisk together the corn syrup, brown sugar, melted butter, eggs, and vanilla extract until smooth.
- Stir in the chopped pecans.
- Assemble the Bars:
- Pour the pecan filling over the partially baked crust.
- Spread it out evenly with a spatula.
- Bake: Bake for 30-35 minutes, or until the filling is set and the top is golden brown. A toothpick inserted into the center should come out with only a few moist crumbs.
- Cool and Cut:
- Allow the bars to cool completely in the pan on a wire rack.
- Once cooled, lift them out using the parchment paper (if used) and cut into squares.
