- 1 lb (450g) ground beef
- 1 small onion, finely chopped
- 1 bell pepper, chopped (any color)
- 3 cloves garlic, minced
- 1 cup uncooked white rice (or 3 cups cooked rice)
- 2 cups beef broth or water
- 1 can (10.5 oz) cream of mushroom soup (or cream of chicken for a different flavor)
- 1 cup frozen corn or peas (optional)
- 1 can (14 oz) diced tomatoes, drained
- 2 cups shredded cheddar cheese (divided)
- Salt and pepper to taste
- 1/2 tsp paprika
- 1/2 tsp Italian seasoning (optional)
- Fresh parsley, for garnish
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Cook the Beef: In a large skillet over medium heat, cook the ground beef with chopped onion and bell pepper until the beef is browned and vegetables are tender, about 5-7 minutes. Add minced garlic and cook for another minute. Drain any excess fat.
- Add Seasoning: Season the beef mixture with salt, pepper, paprika, and Italian seasoning.
- Mix in Ingredients: If using uncooked rice, add it to the skillet, along with the beef broth or water, and stir. (If using cooked rice, you’ll add it later in step 6.)
- Simmer: Bring to a simmer and cook until the rice is tender and has absorbed most of the liquid, about 15 minutes.
- Assemble the Casserole: In a large mixing bowl (or directly in a greased 9×13-inch baking dish), combine the beef mixture, cream of mushroom soup, corn (if using), drained diced tomatoes, and half of the shredded cheddar cheese. If using cooked rice, stir it in at this point.
- Bake: Pour the mixture into the greased baking dish, top with the remaining cheddar cheese, and cover with aluminum foil.
- Bake in the Oven: Bake for 20 minutes covered, then remove the foil and bake for an additional 10 minutes, or until the cheese on top is melted and bubbly.
- Garnish and Serve: Remove from oven and let sit for a few minutes. Garnish with fresh parsley, and enjoy!
