Tex Mex Smothered Burritos

Sauce:
In a sauce warm 2 Tbs olice oil and 2 Tbs spoon flour (I use Pillsbury Gluten Free Flour)
Warm until the flour starts to brown.
Slowly add
2 cups chicken broth
6Tbs chili powder
1 tsp cumin
1tsp garlic
1tsp onion
1 tsp paprika (for extra flavor used smoked paprika)
1/2 tsp oregano
1/2 tsp cilantro
1/4 tsp of salt
(If you don’t have oregano or parsley Italian seasoning will work.)

Filling:
Brown
2 lb ground beef
Add half of the sauce to the beef. Set aside 1/2 cup of the beef mixture.
Warm 4 large tortillas
Fill tortillas with beef mixture and roll up into Burritos

In a cassorole dish add just enough sauce to lightly cover the bottom.
Place rolled up tortillas in casserole dish.
Poor remaining sauce over burritos, top with the 1/2 c beef that was set aside, then sprinkle with 1 cup of cheese
Bake at 350° until cheese is melted.
Serve and enjoy
