Apple Pie Biscuits


Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk (plus more for brushing)

For the Apple Filling:

  • 2 medium apples, peeled, cored, and diced (use Granny Smith or Honeycrisp for the best flavor)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon butter
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon water (if using cornstarch)

For the Topping:

  • 1 tablespoon butter, melted
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon cinnamon

Instructions:

  1. Prepare the Apple Filling:
    • In a skillet, melt the butter over medium heat.
    • Add the diced apples, brown sugar, cinnamon, and nutmeg. Cook until the apples are tender (about 5–7 minutes).
    • If the mixture is too runny, mix cornstarch and water in a small bowl and stir it into the apples. Cook until thickened. Set aside to cool.
  2. Make the Biscuit Dough:
    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
    • In a large bowl, whisk together the flour, baking powder, salt, and sugar.
    • Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Gradually add the milk, stirring just until the dough comes together (avoid overmixing).
  3. Assemble the Biscuits:
    • Turn the dough out onto a floured surface and gently knead it a few times.
    • Roll the dough to about 1/2-inch thickness and cut into rounds using a biscuit cutter or the rim of a glass.
    • Place half the biscuit rounds on the prepared baking sheet. Spoon a small amount of apple filling onto each round.
    • Top with another biscuit round and press the edges gently to seal.
  4. Add the Topping:
    • Brush the tops of the biscuits with melted butter.
    • Mix the cinnamon and sugar together, then sprinkle over the biscuits.
  5. Bake:
    • Bake in the preheated oven for 12–15 minutes, or until the biscuits are golden brown.
  6. Serve:
    • Allow to cool slightly and serve warm. Optionally, drizzle with caramel sauce or a glaze made from powdered sugar and milk.
