Bobble Cake Recipe

Introduction

Bobble Cake is a whimsical and eye-catching dessert made from soft, bite-sized cake “bobbles” (small cake balls or sponge cubes) stacked and held together with cream, ganache, or glaze. Light, fluffy, and customizable, this cake is as fun to make as it is to eat—great for birthdays, tea parties, or just a sweet treat with a twist.

Ingredients

For the Cake Bobbles:

  • 1½ cups (190g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1 tsp vanilla extract
  • 1½ tsp baking powder
  • 1/4 tsp salt

For the Frosting or Glaze:

  • 1 cup (240ml) heavy cream or whipping cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
    OR
  • 1 cup chocolate ganache or icing of choice

Optional Add-ons:

  • Sprinkles, berries, or mini chocolate chips
  • Food coloring (for colorful bobbles)
  • Jam or Nutella for filling

Instructions

  1. Make the Cake:
Preheat oven to 350°F (175°C). Grease a square or round baking pan.
In a bowl, cream together butter and sugar until fluffy. Beat in eggs, one at a time, then add vanilla.
Mix in flour, baking powder, and salt. Gradually add milk and mix until smooth.
  2. Bake:
Pour batter into the pan and bake for 25–30 minutes or until a toothpick comes out clean. Let cool completely.
  3. Form the Bobbles:
Once cooled, cut the cake into small cubes (1-inch) or crumble it and roll into balls using your hands. If rolling, you can mix a bit of frosting or cream cheese into the crumbs to help them hold their shape.
  4. Frost or Glaze:
Whip the cream with powdered sugar and vanilla until soft peaks form.
Dip or roll the bobbles in whipped cream or drizzle with chocolate ganache.
  5. Assemble the Bobble Cake:
Stack the frosted bobbles into a dome or layer them like a pyramid. Decorate with sprinkles, fruit, or extra chocolate drizzle.
  6. Chill (Optional):
Refrigerate for 15–30 minutes to let everything set.

Description

This Bobble Cake is soft, sweet, and bursting with charm. Each “bobble” is a mini cake bite covered in cream or glaze, forming a shareable and festive cake mound. It’s a fun twist on traditional cake that’s just as delightful to look at as it is to eat.

Tips

  • Use a cookie scoop for uniform-sized bobbles.
  • Add different colors to each batch of cake balls for a rainbow effect.
  • Chill the bobbles before stacking for better structure.
  • Use a piping bag to drizzle chocolate or add decorative cream dots between layers.

Variations

  • Chocolate Bobble Cake: Use chocolate cake and chocolate ganache for a richer version.
  • Fruit-Filled: Add a dab of jam or fruit inside each bobble.
  • No-Bake Bobbles: Use store-bought sponge cake or ladyfingers, roll in frosting, and stack.
  • Birthday Style: Mix in sprinkles and use bright colors for a festive look.

Correction

If the bobbles fall apart, the cake may be too dry—add a bit of cream or frosting to bind. If the structure is unstable, chill the cake balls before assembling and use firmer frosting. If the cake is too dense, reduce baking time slightly or check baking powder freshness.

Enjoy

Serve chilled or at room temperature. Whether for a birthday bash or a fun weekend project, Bobble Cake is a playful and delicious way to celebrate!
