Confetti Salad

Introduction

Confetti Salad is a colorful, fresh, and versatile dish that bursts with vibrant flavors and textures. As its name suggests, the salad resembles a cheerful bowl of confetti, thanks to the variety of chopped vegetables, beans, and grains that go into it. It’s healthy, easy to make ahead, and perfect for picnics, potlucks, or as a refreshing side dish to grilled meats, sandwiches, or main entrées. Packed with crunch, color, and nutrients, this salad is as fun to eat as it is to look at.

Ingredients

1 can (15 oz / 425 g) black beans, rinsed and drained

1 can (15 oz / 425 g) corn kernels, rinsed and drained (or 1 ½ cups fresh or frozen corn)

1 red bell pepper, finely chopped

1 yellow bell pepper, finely chopped

1 orange bell pepper, finely chopped

1 small red onion, finely diced

1 cucumber, chopped into small cubes

1 cup cherry tomatoes, quartered

1–2 carrots, shredded or finely chopped

½ cup fresh parsley or cilantro, chopped

2 green onions, sliced

For the dressing:

⅓ cup olive oil

3 tbsp red wine vinegar (or lime juice for a zestier version)

1 tbsp honey or maple syrup

1 tsp Dijon mustard

1 tsp garlic powder

Salt and black pepper, to taste

Instructions

Prepare vegetables: Chop all vegetables into small, uniform pieces for a colorful, even look.

Mix salad base: In a large bowl, combine black beans, corn, bell peppers, onion, cucumber, cherry tomatoes, and carrots. Toss gently.

Add herbs: Stir in parsley or cilantro and green onions.

Make dressing: In a small bowl or jar, whisk together olive oil, vinegar (or lime juice), honey, Dijon mustard, garlic powder, salt, and pepper until emulsified.

Combine: Pour dressing over the salad and toss until everything is evenly coated.

Chill: Cover and refrigerate for at least 30 minutes before serving to let flavors meld.

Serve: Enjoy chilled or at room temperature as a side or light main dish.

Description

Confetti Salad is a rainbow in a bowl—crunchy peppers, juicy tomatoes, hearty beans, and crisp cucumbers tossed in a light, zesty dressing. It’s refreshing yet filling, offering a perfect balance of sweet, savory, and tangy notes.

Tips and Variations

Add protein: Mix in grilled chicken, shrimp, or quinoa to turn it into a main dish.

Spicy kick: Add a diced jalapeño or a sprinkle of chili flakes.

Cheese boost: Feta or cotija cheese crumbles add a salty, tangy layer.

Dressing swap: Try a lime-cilantro vinaigrette or balsamic dressing for different flavors.

Make ahead: Salad can be prepared a day in advance; just keep the dressing separate until ready to serve.

Seasonal twist: Swap vegetables with what’s in season, like zucchini in summer or roasted sweet potatoes in fall.

Correction

Some versions of Confetti Salad use only raw vegetables, which can sometimes taste flat. Adding beans and a tangy, slightly sweet dressing enhances the texture and flavor, making the salad more satisfying and balanced.

Enjoy

Serve Confetti Salad as a vibrant side at barbecues, picnics, or family dinners. Its cheerful colors and refreshing flavors will brighten any table and make it a healthy favorite everyone will come back for!
