Old Fashioned Potato Candy

Ingredients:

  • 6 cups powdered sugar, plus more if needed
  • 1/2 cup russet potato, mashed and cooled (about 1 large potato)
  • 1/3 cup creamy peanut butter
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt

How To Make Old Fashioned Potato Candy:

  1. In a large bowl, use an electric mixer to beat the mashed potato, milk, vanilla, and salt on medium speed for 2 minutes.
  2. Gradually mix in powdered sugar, 1 cup at a time, until a thick dough forms. Add more powdered sugar if needed, 1 tablespoon at a time, until the dough reaches a slightly thicker than cookie dough consistency.
  3. Form the dough into a ball and dust it with powdered sugar. Roll out the dough on a sheet of wax or parchment paper into a 1/8-inch thick rectangle, trimming it to a 10×12-inch size.
  4. Generously sprinkle powdered sugar over the rolled-out dough. Place another piece of parchment paper over the dough, then invert the rectangle and remove the top piece of parchment paper.
  5. Evenly spread peanut butter over the dough. Roll the dough tightly from the long side to form a jelly-roll style log, using the parchment paper to guide it. Wrap the log in parchment paper and freeze for 1 hour.
