One Pot Lasagna Soup

Introduction

One Pot Lasagna Soup takes everything you love about traditional lasagna—savory meat, tender noodles, rich tomato sauce, and creamy cheese—and transforms it into a cozy, hearty soup. It has all the flavors of lasagna without the layering or long baking time. Perfect for busy weeknights or chilly evenings, this one-pot meal is hearty, comforting, and easy to make with simple pantry ingredients.

Ingredients

1 lb (450 g) ground beef (or Italian sausage, or a mix)

1 tbsp olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, diced (optional)

1 can (28 oz / 800 g) crushed tomatoes

1 can (15 oz / 425 g) tomato sauce

1 tbsp tomato paste

6 cups chicken or beef broth

2 tsp Italian seasoning

1 tsp dried basil

½ tsp crushed red pepper flakes (optional, for spice)

Salt and black pepper, to taste

8–10 lasagna noodles, broken into bite-sized pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Fresh basil or parsley, chopped (for garnish)

Instructions

Cook meat: In a large soup pot, heat olive oil over medium heat. Add ground beef (or sausage) and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.

Add aromatics: Stir in onion, garlic, and bell pepper. Cook 3–4 minutes until softened.

Build the broth: Add crushed tomatoes, tomato sauce, tomato paste, broth, Italian seasoning, basil, red pepper flakes, salt, and pepper. Stir well and bring to a simmer.

Cook pasta: Add broken lasagna noodles directly into the pot. Simmer 15–20 minutes, stirring occasionally, until noodles are tender.

Prepare cheese topping: In a small bowl, mix ricotta, mozzarella, and Parmesan until creamy.

Serve: Ladle soup into bowls. Dollop each serving with a spoonful of the cheese mixture and garnish with fresh basil or parsley.

Description

This One Pot Lasagna Soup is rich, hearty, and satisfying, with tender noodles swimming in a savory tomato broth filled with meat and Italian herbs. The creamy cheese topping melts into the hot soup, giving you all the indulgent flavors of lasagna in a warm, comforting bowl.

Tips and Variations

Meat swap: Use ground turkey, chicken, or plant-based crumbles for a lighter version.

Cheese options: Add provolone or fontina for extra richness.

Veggie boost: Stir in spinach, zucchini, or mushrooms in the last 5 minutes of cooking.

Make ahead: Cook the soup base without noodles; add noodles fresh when reheating to prevent them from getting soggy.

Gluten-free: Use gluten-free pasta.

Spicy kick: Add Italian sausage or extra chili flakes for more heat.

Correction

Some versions of lasagna soup simply mix ricotta into the pot, but this can make the broth heavy and grainy. Instead, serving the cheese as a creamy dollop on top allows it to melt gently into each bowl, giving the perfect creamy texture with every spoonful.

Enjoy

Serve One Pot Lasagna Soup hot with crusty garlic bread or a crisp green salad. It’s cozy, cheesy, and full of flavor—just like lasagna, but easier and quicker to make!
