2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Zest of 1 lemon (optional, for added brightness)
Powdered sugar (for dusting, optional)
Instructions
Preheat oven to 350°F (175°C). Grease and flour an 8-inch round or loaf pan.
Mix wet ingredients: In a large bowl, whisk together the yogurt, sugar, and oil until smooth.
Add the eggs one at a time, then stir in the vanilla and lemon zest (if using).
Combine dry ingredients: In another bowl, sift together the flour, baking powder, baking soda, and salt.
Combine wet and dry: Gradually add the dry ingredients to the wet mixture.
Mix just until incorporated — do not overmix.
Bake: Pour the batter into the prepared pan.
Bake for 35–45 minutes, or until a toothpick inserted into the center comes out clean.
Cool and serve: Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
