Walnut Maple Goat Cheese Roasted Sweet Potatoes

Ingredients:

  • 4 medium sweet potatoes, peeled and cubed
  • 3 tablespoons olive oil
  • 1/4 cup maple syrup
  • 1 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup walnuts, roughly chopped
  • 4 ounces goat cheese, crumbled
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
  • Preheat your oven to 400°F (200°C).
  1. Prepare the Sweet Potatoes:
  • In a large bowl, combine the cubed sweet potatoes, olive oil, maple syrup, cinnamon, salt, and pepper.
  • Toss until the sweet potatoes are evenly coated.
  1. Roast the Sweet Potatoes:
  • Spread the sweet potato mixture in a single layer on a baking sheet lined with parchment paper.
  • Roast in the preheated oven for about 25-30 minutes, or until the sweet potatoes are tender and lightly caramelized, stirring halfway through.

  1. Garnish and Serve:
  • Transfer to a serving dish and garnish with fresh chopped parsley before serving.
